Introduction
When Pei Wei took this off the menu, I searched for a way to make it myself. It's not exact, but at least it stills my cravings. Ingredients

Sauce:
Soy Sauce (Lite) 1/2 cup
Sweet Chili Sauce 1 tbs
Tabasco Chipotle Sauce 1 1/2 tbs
Ketchup 1 tbs
Cane Sugar 1 tbs
Beef broth, low sodium 3/4 cup
Dish:
Olive oil or soybean oil 1 tbs
Japanese Noodles (Soba or Ramen) 1 package (about 6.5 oz)
Sliced yellow onions 1/2 cup
Carrots, fresh or canned 14 oz can
Bamboo shoots 8 oz can
Water chestnuts, sliced 8 oz can
Scallions (green part only) 1/4 cup
Cilantro
Lime
Directions
1. Whisk all sauce ingredients together in a small bowl. Set aside.
2. Place 1 tbs of oil in a wok. Once heated, add vegetables. Saute for 1 min.
3. Add sauce and bring to a boil
4. Add noodles. Once sauce comes back to a boil, reduce heat slightly.
5. Stir noodles and vegetables to coat
6. Keep simmering until sauce starts to thicken
4. Turn off heat and toss in scallions
5. Garnish with cilantro and lime wedges
