Introduction

Got this recipe from a coworker. Changed out the 2 eggs for EggBeaters and 1.5 cups sugar for 3/4 cup Splenda Baking Blend. These are approx. 1/2 the calories of regular brownies and quite tasty. Ingredients

    1 can (15 oz) black bean, rinsed & drained
    1/4 cup water
    1 cup whole wheat flour
    4 Tbsp cocoa powder
    1/2 cup EggBeaters
    3/4 cup Splenda Baking Blend
    1 tsp vanilla
    1/2 cup chopped pecans or walnuts
    Vegetable oil spray or 1/2 Tbsp shortening
    (to grease baking pan)

Tips

I used a glass pan w/ shortening for grease and it took 30 minutes. They turned out perfect.


Directions

Preheat oven to 350 F.
Blend beans and water in blender or food processor until smooth and creamy.
In a mixing bowl,mix EggBeaters, Splenda Blend, and vanilla.
Stir in blended bean mixture.
Sift cocoa powder and flour together, add to wet ingredients, and stir until well blended.
Mix in nuts.
Pour batter into greased 8x8 baking pan.
Bake for 30-35 minutes.
Serve as is or frost with your favorite frosting.

Serving Size: makes 16 2x2 in. brownies
