Introduction

Low calorie, high taste chicken tortilla soup. Great alone, or as a base for even more veggies and goodies! Low calorie, high taste chicken tortilla soup. Great alone, or as a base for even more veggies and goodies!
Number of Servings: 12

Ingredients

    1 can black beans
    approx. 2 pounds boneless skinless chicken breast
    1 can tomato paste (larger-12 oz.?)
    approx. 3 cups celery, rough chopped
    1 large sweet onion, rough chopped
    1 large can diced tomatoes with sauce
    2 cans salsa verde or green chilis
    approx. 4 cloves garlic

    Optional, for toppings: sour cream, shredded colby jack, bacon bits, green onions or chives, tortilla strips

Directions

Rinse fresh chicken and trim fat. Place in bottom of crock pot. Add all other ingredients on top and stir. Set crock pot to low, cook for 8 1/2 to 9 hours (I set it before work and leave it all day). After 8 to 9 hours, open crock pot, pull out chicken breasts, and shred like you are making pulled pork. Add back to soup and stir. Serve with any sides you'd like.
