Introduction

Number of Servings: 10

Ingredients

    3 boneless skinless chicken breasts (about 1.5 lb)
    2 cups of chicken broth
    1 jar of curry sauce (NOT paste, use less if paste)-I like Panek's Curry sauce because it has no artificial ingredients
    2 cups of chopped and peeled carrots
    1.5 cups of chopped onions
    1 package frozen peas
    1 tbsp curry powder (you can tweak this to provide the heat you want to have. I cooked mine mild, so the baby could eat it)

Tips

If it is too thin, you can toss in a cup or so of instant brown rice and cook for thirty more minutes or mix some of the broth with cornstarch and add into the pot.


Directions

Toss all of this in the pot, turn on low for 8 hours. Near the end, pull out chicken breasts and shred.



Serving Size: Makes a large crock-pot full, so maybe 10-12 servings
