    Break open two eggs put it in a medium size bowl add 1cup of 1% milk,0.25 cup of canola oil, 1 cup of white flour, 2.25 Tsp baking soda, 0.75 Tsp Salt, 1/4 cup of dried cherries,0.25 cup of raw coconut shredded, 3 Tbsp of yellow corn meal. Blend all ingredients together with a spoon or an electric mixer. Spray cup cake holder pan with nonstick spray then pour ingredients into cup cake holder pan.


Pre-heat oven to 450 F Place muffin pan in oven for 15 minutes or until done.
