Introduction

This is a quick and easy recipe for preparing a healthy version of Spanish Rice. It takes about 30 minutes to make and provides a good tasting side to Mexican style meals. Ingredients

    1 cup of uncooked long grain rice
    3 tbs. onion, chopped
    1 14.5 oz. can of sliced stewed tomatoes
    2 tbs. oil (I use Canola)
    1 cup water
    1 tsp. chili powder

Tips

It is important not to lift the lid on your skillet while the rice is cooking. I use a stanless steel skillet which seems to work better than a non-stick skillet. Don't be concerned if the rice has stuck a little to the skillet. The rice will break loose when you stir the rice with a spoon.


Directions

Heat a 10 inch skillet (that has a lid) over medium-high heat until hot. Add the 2 tbs. oil to the skillet followed by the onion and rice. Stir the rice and onion until the rice puffs up and begins to turn a golden brown. Add the remaining ingredients and stir to combine. When the liquid begins to bubble around the edges place the lid on the skillet, turn the heat to simmer-low and cook for 25 minutes. Do not lift the lid during the cooking time. After 25 minutes remove from heat and fluff the rice with a spoon and serve.
