Ingredients

1 Tbsp Olive Oil
2 carrots, chopped
2 celery stalks, chopped
1 small onion, chopped
coarse salt and pepper
1 can Swanson Natural Goodness Chicken Broth
2 boneless, skinless chicken thighs
1/3 cup wild rice blend, seasoning discarded.
Directions
In medium sauce pan, heat oil over medium high heat. Add carrotts, celery and onion. Cook until crisp/tender, about 3-5 minutes.
Add broth, chicken rice and 1.5 cups of water to pan. Bring to boil; reduce to simmer and cover. Cook until chicken in opaque, 6-8 minutes. With slotted spoon, transfer chicken to cutting board and let cool. When cool enough to handle, shred with 2 forks.
Meanwhile, continue to cook soup, uncovered until rice is tender, 6-8 minutes longer. Return chicken to pan. Simmer until heated through, 1-2 minutes.
(To store, place in air tight container and refrigerate up to 2 days.)
