Introduction

This is actually "the ultimate spinach" but since you need the steak drippings to make it, we may as well turn it into a whole meal! :-) This meal is very high in iron and protein. Ingredients

    1" thick Top Sirloin Steak (13.5 oz, lean weight)
    Fresh Spinach (calculated for 10 oz pkg) trimmed and washed
    1/2 an onion
    1 T olive oil
    freshly ground pepper
    garlic salt
    1 T bacon bits
    splash of lemon juice (optional)

Tips

It's fairly important to get a steak that is nearly an inch thick, at least, so the thermometer gives an accurate reading. If you have extra and don't want the calories, you can thinly slice the leftovers and use it for a steak salad the next day.


Directions

Let steak come to room temperature, season with pepper and garlic salt. Heat a CAST IRON SKILLET over medium high heat. Preheat oven to 350 F. Sear steak in skillet for 1 or 2 minutes on each side. Insert MEAT THERMOMETER horizontally into steak center. Put skillet in oven for about 10 min, or until thermometer shows desired temperature. (145 for med rare)

Meanwhile, heat olive oil in another skillet. Saute onions until translucent. Remove from heat.

When steak is done, remove from oven. Transfer to serving platter to let it rest before slicing. There should be some beef juice left in the skillet. Place skillet with beef juice on burner and transfer onions to it. Put spinach in skillet and stir so that all spinach is coated with juice and mixed with onions. Sprinkle with additional garlic salt and toss in bacon bits. Saute for 3 - 5 minutes, until spinach has all wilted and reduced. Toss in a splash of lemon juice.

Cut steak into 2 servings. Divide up spinach. Chow down!

Serving Size: 6 oz steak, 5 oz cooked spinich.
