Introduction

This meatloaf was based on my original recipe with ground beef. It varies from traditional meatloaf in that it uses chili sauce to jazz things up a bit. Number of Servings: 8

Ingredients

    1/2 c onion, chopped
    1/2 c celery, chopped
    1/2 c green pepper, chopped
    1/2 c carrot, diced
    1 to 2 Tbls olive oil
    8 oz Heinz chili sauce
    2 lbs ground turkey (I use half 99% lean with half 93% lean)
    1/2 tsp salt
    1/2 c seasoned breadcrumbs (can use whole wheat)
    1 egg

Directions

Saute veggies in olive oil. Add to chili sauce. Reserve a small amount of the mixture to use as a topping. Mix the remaining with the turkey, salt, breadcrumbs and egg. Blend well and shape into a loaf and bake in a 9 x 13 pan (or can be baked in a loaf pan). Bake 35 to 40 minutes at 350 degrees. During the last 10 minutes, add reserved mixture to top and return to oven.

Serving Size: Makes around 10 slices
