Introduction

This cooks up fast and can be used to fill burritos or as I use over salad greens. When making it I thought of how much my son likes Chipotle- he loved it and so do I. Ingredients

    1 pound ground chicken
    1 cup chopped onion
    2.5 cups left over brown rice
    1 can yellow corn, no salt added
    1 can black beans
    6 tsp taco seasoning (or to taste)
    1 jar salsa, chunky, medium heat
    1/2 cup water

Tips

You could cut the salt by making your own taco seasoning. I did not measure the taco seasoning but am sure I used 6 or less teaspoons.


Directions

1. Brown the chicken with the onion, drain any fat.
2. Add the salsa and taco seasoning.
3. Add the corn, black beans, and rice.
4. Add water if needed. Simmer for 10 minutes.

Serving Size: makes approximately 8 - 1 cup servings
