    Patak's Rogan Josh Curry Paste, 0.5 cup
    Bok Choy, raw-shreaded, 3 cup
    Zucchini, 2 cup, sliced
    Mushrooms, fresh, 2 cup, pieces or slices
    Onions, raw, 1 cup, chopped
    Scallions, raw, 1 cup, chopped
    Peas, frozen, 2 cup


Chop all veggies, toss into a very big stir-fry pan with curry paste. Cover and let simmer until vegetables are desired consistency.

I added some seitan also cooked in rogan josh curry paste for added protein. Enjoy!

Serving Size: Makes 8 1-cup servings.
