Ingredients

1 block medium or firm tofu (I use firm)
1-2 tsp garlic powder
2 tbsp nutritional yeast
1 tbsp lite soy sauce (or tamari)
1/2 tsp turmeric
1/4 tsp basil
1 tsp sage
1/4 tsp black pepper
1-2 tsp dijon mustard
1 cup chopped carrots (my favorite add in)
other add-in suggestions: tomatoes, onions, peppers, celery, salsa, spinach, whatever!
Directions
Crumble tofu into a bowl and mix well with all spices, including soy sauce (do not mix in carrots).
Spray a large nonstick skillet with nonstick spray and set to medium-high heat.
Add tofu to skillet and let sit, stirring occasionally, for approx. 10 minutes, or until tofu has lost ALL it's water and is starting to brown. Add in carrots/other veggies near the very end of this process. Enjoy!
Serving Size: makes 3 servings (approx 2/3 cup each)
