Ingredients

1 pkg Bear Creek Tortilla Soup mix (9oz)
1 can Juanita's Mexican Style Hominy (29 oz), drained
1 can Santiam Fancy Golden Sweet Whole Kernel Corn (15.25 oz), drained
8 cups water
*1-2 Boneless, skinless chicken breasts
Salt and Pepper to taste
* The nutritional information is based on "yield from 1.3 lb ready-to-cook chicken"... that's what I used but you can add as little or much as you want, just be sure the adjust your nutrition fact accordingly.
Tips
I've also done this same recipe and added in a can of black beans and a small can of chicken broth. Super tasty!
Directions
Cut the chicken into cubes (or however you desire), season as you like (I just used salt, pepper and a little lime juice) and saute until cooked through.
Separately in a good-sized stock pot, start 8 cups of water to boil, prepare the soup as directed on the package.
Once the soup mix is whisked/dissolved well into the boiling water- stir in the hominy, corn and chicken.
Cook 20 or so minutes more- the soup package says 15 minutes, I gave is a little extra while I prepared the garnishes. The flavors came together very nicely.
For garnishment consider: guacamole, fat-free sour cream, tortilla chips/corn tortilla crisps, salsa, black olives... etc. (none of these are figured into the nutritional information)
Serving Size: Makes 5 (generous) 2-cup servings. Very filling!
