Ingredients

    2 c oats
    1.5 oz dried cranberries (approx1/3c)
    1.5 oz dried apricot, chopped (approx 1/3c)
    1/4 c unsweetened coconut flakes
    1/2 c chopped walnuts
    1 can (6oz) pineapple juice

Tips

the use of pineapple juice replaces the need for honey or egg whites. would probably have been better with a bit less liquid. be careful if not completely cool before putting granola away in container it will become a mushy mess because of the liquid.


Directions

in a large cookie sheet or baking dish with sides layer oats, coconut, nuts, and pineapple juice. Bake at 330 degrees for 20 min, stirring every 10 min. After done cooking stir once again turn off oven leave granola in oven for another 10 min. Take out and let cool about an hour again stirring every 10 min until completely cool store in an air tight container
