Ingredients

    Iceberg Lettuce (salad), 2 head, medium (6" dia
    Cranberries, dried, sweetened (craisins), 2 cup
    Any tropical mix - dried fruit
    Almonds, 1.5 cup, slivered(I use a 5 oz bag)
    Athenos Reduced Fat Feta Cheese, 1 oz(any brand is fine) -OPTIONAL
    Ken's Steak House, Fat Free Raspberry Pecan Salad Dressing, 2 Tbsp, 1.5 serving(PER SALAD SERVING) OPTIONAL
    MAY ALSO USE ANY TYPE OF DRIED FRUITS - APRICOTS ARE ALSO GREAT!

    also shredded carrots Optional- I occasionally add carrots.

Tips

fruity based vinagrettes are going to bring out the best taste and go better with the fruits than any other dressing

other fruits may be used- its up to each individuals likes as well as the cheeses.


Directions

RINSE AND DRY LETTUCE- Chop up to desired size shreds
add dried fruits (may need to be cut into smaller bits) add almonds (pecans can also be used- depends on your taste buds!
add any other veggies you like such as carrots (shredded) (i use a potatoe peeler and make thin strips!)
toss well
Top with Feta cheese or blue cheese - again to suit your tastes
Top with dressing- whichever to suit taste - your going to want to use a fruity kinda dressing such as a strawberry vinagrette or raspberry


Serving Size: One serving is one regular cereal bowl - makes up to 20 servings
