Ingredients

    Spinach, frozen, 1 package (10 oz) yields
    Beans, black, dried, 1 cup
    Yellow Sweet Corn, Canned, 1.3 can (12 oz) yields
    Onions, raw, .5 small
    Garlic, 1 clove
    Ginger Root, 1 tsp
    sea salt, coarse, 365 brand, 1 tsp
    Pepper, black, 1 tsp
    *Cumin seed, 2 tsp
    Cilantro, dried, 1 tbsp

Directions

prepare dried black beans by soaking for 8-12 hours. Rinse and add to boiling water with enough water to cover by an inch. Reduce heat and simmer til' tender ( approx. 45 minutes.) Stir in spinach and drained corn. Stir regularly for 5-10 minutes or until heated through. Add more water if necessary.
