Introduction

My Grandmother's beans with hamburger and greens. This is healthy comfort food in my family. Grandmother ladled it over a piece of sourdough on a plate and then drizzled a bit of olive oil on top.It is good for a bowl as well... It is also good without meat! Ingredients

    3 T. olive oil
    1 onion, chopped
    2 cloves garlic, chopped
    1 14.5 oz. diced tomatoes
    1 15 oz. can tomato sauce
    8 c. chopped fresh kale or other greens
    1 1/2 lb 7% fat ground beef,(buy good quality)
    6 c. cooked pinto beans
    4 c.water from cooking the beans, (or use canned beans and any type of stock or broth)
    small pinch oregano
    salt and pepper to taste

Tips

I pressure cook 3 cups dry beans in 8 cups of water so I'm not sure how much beans are in a can of pre- cooked beans.


Directions

In a skillet, cook ground beef and rinse in a colandar under hot running water. Set aside. in a large pot, measure olive oil and cook chopped onion over medium heat until it is soft and translucent. Add copped garlic at th end and watch that it doesnt burn. When garlic is done, add tomatoes and tomato sauce and greens. Cover and cook for 5-10 mins, (depending on type of greens). Add cooked hamgurger, the beans and broth or the bean liquid and season to taste. Simmer a bit. Even better the next day!
