Number of Servings: 4

Ingredients

    1 large red pepper
    1.5 tbsp Extra Virgin Olive Oil
    Salt to taste
    Pepper, black to taste
    1 tsp Garlic

Directions

Makes 4 servings

- Preheat broiler
- Place red pepper on a foiled cookie sheet
- Broil until brown and skin of pepper looks wilted - around 15- 20 minutes
- cool to room temp
- peel and deseed the pepper
- cut into strips
- place in bowl and toss with remaining ingredients
- cover and refrigerate a minimum of 5 hours

    Roasted according to directions, then just ate them as a side with a bit of Spike (salt alternative). Wonderful! - 3/24/12

    The roasted red peppers come out great. I suggest using them quickly (the day they are made) becuase the liquid from the oil and peppers will turn into a solid in the fridge. They taste great on sandwiches :) - 6/2/10
