6oog or one and a half pounds of boned chicken breast
Quarter of a medium size onion, finely chopped
Clove of garlic, crushed
Finely grated zest of one lemon
Juice of one lemon
3 tablespoons of cider or wine vinegar
1 teaspoon cinnamon
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon crushed chilli flakes
1 Tablespoon of Splenda
Quarter teaspoon salt
Serve with fat free greek yoghurt.
Suitable for the Attack phase as it is.
For the Cruise phase you can add a handful of baby spinach leaves in to the crockpot about 10 minutes before serving - or serve on a bed of the spinach leaves or with a green salad.
Mix everything else together, pour over the chicken and let it cook. You might want to add a tablespoon or two of water if you've got a big crockpot.
All crockpots seem to be different - you will know how long yours takes to cook something like this. My crockpot takes a minimum of 4 hours to cook this and will hold it up to 6 hours.
