Ingredients

    3 Large Eggs
    1/8 cup Green Onions
    6 Grape Tomatoes
    1 Tbsp. Diced Bell Pepper (any color)

Tips

Whole eggs can easily be replaced with egg whites.
A variety of veggies can be used.
These work great on mini-bagels for a quick, simple, and healthy breakfast on the go!


Directions

Put the eggs into a bowl and scramble them together. Pour into a muffin pan in equal portions. Add the diced veggies to the top, as they automatically sink into the egg. Bake at 350 for 20 minutes.
