    For 2
    1 good size free range chicken breast
    2 tbsp cream cheese with fines herbes - Boursin is good.
    1 glass/ 3.5 fl oz white wine (or good chicken stock if you don't use alcohol)


In a piece of foil place each chicken breast. Put the cheese in the slit in each breast. Pour on the wine (or chicken stock) and seal each packet. Place in a small baking dish and bake for 20 mins in a medium hot oven.

Serve half a breast per person, with the juice and a garnish of parsley with either baked potatoes, pasta or brown basmati rice and green vegetables.
