    11 oz pkg of butterscotch chips
    1/2 cup peanuts
    5 oz container of Chow Mein Noodles


Melt the butterscotch chips in the microwave for 1 minute and 30 seconds. Run a knife thru the noodles to break them up a bit. Then pour them into the melted butterscotch along with the nuts. (I like to crush the nuts but you can leave them whole.) Place them by the spoonful on a cookie sheet covered in wax paper. Put them in the fridge for 10 minutes and they are done.
Recipe makes 36 cookies.

  • Quick and easy recipe. Crunchy peanuts (I used dry roasted) and crunchy chow mein noodles coated in butterscotch are a wonderful combination and a very satisfying treat. Easy to just have one since they are so rich. Be sure to keep them on the small side no bigger than a teaspoon for easy eating. - 12/23/13
