Introduction

Number of Servings: 3

Ingredients

    1 15oz can Pinto beans, drained and rinsed
    3/4 cup water, more if needed
    1/2 tsp onion powder
    1/4 tsp garlic powder
    1/4 tsp cumin powder
    1/4 tsp nutritional yeast

Tips

I use more or less spices depending on the day. The original recipe calls for 6 cups of rinsed and drained beans. I only do enough for me. The nutritional info here is different from the recipe, might be the type of canned beans. Lots of sodium in the beans so be sure to rinse well or do like I do and start with dried beans, soaked over night, cooked until soft and then proceed.
You can also use Great Northern beans.
I like this so much it is hard to make it a side serving!


Directions

Put the drained and rinsed beans in a shallow non stick frying pan. Add all the other ingredients using more water if necessary to just cover the beans. Let simmer about 15 minutes. When beans get soft mash about 1/3 of them to make it saucy. Divide into 3 or 4 small side servings. Refrigerate left overs for another day.

Serving Size: Makes about 3 - 4 servings as a small side

    I hope you liked this. Beans don't affect my blood sugar levels. Just eggs in the am does not fill me up, this helps.

    There are a few recipes in that book that I use often. I especially like the Kickin Chili, Tofu Scramble and the Eggplant. I often do the strength training exercises while watching TV.
