Introduction

This is just like the squash casserole you would get at the Blackeyed Pea Restaurant. This is just like the squash casserole you would get at the Blackeyed Pea Restaurant.
Number of Servings: 6

Ingredients

    2 lbs. Summer Squash
    1/4 cup Onion-chopped
    5 TBSP Breadcrumbs
    1 Large Egg
    1 TBSP Butter
    4 tsp Splenda

Directions

Slice squash into 1/2" slices and cook until just tender (boil or microwave). Put remaining ingredients, less 1 TBSP of breadcrumbs, in a bowl. Place hot, drained squash on top on ingredients in the bowl. Use a potato masher to combine and break up squash. Be sure and leave the squash chunky. Pour ingredients in a baking dish and smooth out. Sprinkle remaining 1 TBSP of breadcrumbs over casserole.

Place in a 350 oven for 20 to 30 minutes until browned on top. Let stand for about 5 to 10 minutes before serving.

Serving Size: Makes 6 generous servings.

    Good. We have tried this adding in No Salt and pepper and without - Good both ways. I like that this is pretty low carb and low fat. Changed sweetner to Stevia. - 5/12/19
