Ingredients

    1 lb dried, Split Peas, sorted and rinsed
    1 Cup Diced Onion
    1 Cup Diced Celery
    1 Cup Diced Carrots
    2 Large Potatoes
    2 Cups Diced Ham (cooked)
    2 Cups Diced Bacon (cooked)
    8 Cup Chicken Broth
    1 Tbsp Extra Virgin Olive Oil
    2 Tbsp Bail

Tips

You can freeze individual or family portions for nights you don't want to cook!!!!


Directions

Cook Bacon, Dice and put off to the side.

In your soup pot, add the Olive Oil, Onion, Celery, and Carrots. Cook over Medium-Low Heat just until the Onions are slightly light Brown/Yellow.
In crease heat to High and Add the Chicken Broth, Potatoes, Ham, Bacon, and split peas. Add Basil to taste. Bring to a boil.
Reduce heat, cover, and simmer for 45 Minutes (or until peas are super tender)
