1.5c Cooked Quinoa
0.5c Cooked Wheat Berries
1c Unsweetened Vanilla Almond Milk (Almond Breeze)
150g chocolate whey
55g Plum Amazins (or chopped dried prunes)
46g Ground Flaxseed (Bob's Red Mill Golden)
40g Unsalted chopped almonds (or another nut of choice)
Tips
I cook the Wheat Berries and Quinoa ahead of time - they store fine cooked in fridge
Directions
Pre-heat oven to 325
Mix Quinoa, Wheat Berries, Whey Powder, and Flax Seeds in a bowl (see tip below)
Add Almond Milk and mix well
Add nuts and dried plums and mix well
Grease muffin tins w/ spray and divide batter evenly
Bake at 325 for 20 - 30 minutes (until middle is firm) and enjoy!
