Introduction
I was being creative, honestly. I was being creative, honestly.Number of Servings: 2
Ingredients
-
Large chicken breast
2 Tbsp teriyaki marinade
1/2 medium sized onion (chopped)
1 cup fresh green beans (snap off ends)
1 cup frozen or fresh chopped broccoli
1 medium carrot or 6 baby carrots (chopped)
1 medium celery stalk (chopped)
1 large egg
1 tbsp sesame oil
1 tbsp canola oil
2 tbsp low sodium soy sauce
crushed red pepper (to taste)
garlic powder (to taste)
Asian hot sauce (to taste)
*(flavors as measured make it spicy, so beware)
Directions
Marinade chicken for at least half an hour. While chicken is marinading, chop all vegetables into large bite size pieces.
Cut the chicken into strips about 2" x 1/2" and brown in large skillet or wok with remaining marinade sauce.
Once chicken has fully browned, add oils, sauces, vegetables, and spices to the chicken and cook on medium heat. Once vegetables have cooked most of the way through, scramble egg and stir into mixture in skillet. Continue cooking until egg is solid and vegetables are cooked (but still crunchy).
Serves 2 if eaten as is, could probably serve 4 if served over brown rice.
