Ingredients

    1 c. Greek Yogurt, plain 0%
    1 Persian Cucumber w/peel, grated
    1 Garlic Clove, pressed OR 1/8 t. granules
    2 t. EVOO
    1 t. Red Wine Vinegar (any, except Balsamic?)
    1/4 t. Dried Dill Weed (more or less to taste)
    1/4 t. Salt, to taste

Tips

No need to create a thickened yogurt by draining, because Greek yogurt is already thick. No need to squeeze the liquid from the cucumber, because the juice helps to thin the thick yogurt. Easy and delicious - enjoy!


Directions

Wash cucumber. Combine all ingredients in a bowl with a lid. Can be eaten immediately, but better if chilled to let ingredients marry.

Serve with toasted whole wheat flat bread. A nice accompaniment to meat as well.
