Number of Servings: 12

Ingredients

    2 Cups Oat Bran
    1/4 Cup packed brown sugar
    2 teaspoons baking powder
    1 cup skim milk
    2 egg whites, lightly beaten
    1/4 cup honey
    1/4 cup unsweetened applesauce

    Optional

    1/4 cup Nuts(walnuts, pecans, almonds, sunflower seeds)
    1/4 cup fresh fruit (blueberries, strawberries, apple)
    1/4 cup dried fruit (raisins, apricots, cranberries)

Tips

Allow muffins to sit in pan for 10 minutes before removing to cool. If you use paper liners, the muffins will stick until they have had a chance to sit.


Directions

Heat oven to 425 degrees. Either line a muffin pan with paper cups or use a light cooking spray. Combine dry ingredients in large bowl. In smaller bowl lightly beat egg whites, mash in banana, add remaining wet ingredients and mix lightly. Add wet ingredients to the larger bowl with dry ingredients. Mix gently then fill muffin cups 3/4 full. Bake on middle rack for 16-19 minutes.
