    3 tbl reduced sodium chicken broth
    1 tbl ketchup or tomatoe paste
    2 tsp Chinkiang vinegar or balsamic vinegar
    1 tsp sugar
    1 tsp reduced sodium soy sauce
    1/2 tsp sesame oil
    1/4 tsp cornstarch
    1/4 tsp crushed red pepper, or to taste

    Tofu and mushrooms:
    14 oz water packed extra firm tofu, rinsed
    1/2 tsp salt
    2 tbl canola oil, divided
    1 tbl minced garlic
    1/2 onion chopped small
    2 cups sliced white mushrooms


Whisk all ingredients together and set aside.

Tofu and Mushrooms:
Place tofu on several paper towels and sprinkle with 1/4 tsp of salt. Turn over and sprinkle with remaining salt. Place paper towels on top and weight down with a plate or pan. Set aside for 5 minutes. Cut into 1 in cubes

Heat skillett until hot on high with 1 tbl oil. Add garlic and onions and cook until fragrant, 30 sec. Add Mushrooms and stir fry until soft. Transfer to plate

Add remaining oil to pan and reduce heat to med. Add tofu. cook until both sides brown, about 5 min each side. Ad Sauce and mushrooms back to pan. Increase heat to high and stir fry until sauce thickens and coats tofu.

Serve immediately.
