Introduction

This is an excellent recipe and very healthy. It is a take on the kind Baja Fresh serves. It tends to taste better when the flavors have time to blend, so it's best to make it at least 4-5 hours before needing it. It's great as a salad dressing, mixed with rice or cottage cheese.

I have added other veggies to this as I pulsed and made a cole-slaw type of salad as well.

Ingredients

    1 lime, peeled
    1/2 cup cilantro leaves (some stems is okay)
    1/4 tsp Crushed red pepper
    1 large onion, peeled and quartered
    5-6 Roma tomatoes, cored

Tips

You can squeeze the lime juice before adding it if you don't like alot of pulp. Also, this recipe is easily adapted adding more or less of anything in particular to suit your tastes.


Directions

In a food processor, pulse lime, cilantro and red pepper until blended. Add onion and roma tomatoes and pulse until they both are chopped.

Store in a sealed container in fridge.

Serving Size: Makes 12 1/4-cup servings
