Introduction

I love this on Rye Crisp, celery or Wasa Toast. Of course whole wheat is also good. I love this on Rye Crisp, celery or Wasa Toast. Of course whole wheat is also good.

Ingredients

    Even though I don't always use Best Foods in this recipe I did add it to this one. Many times I'll just use a Tbsp of really good EVOO (Spanish olive oil is really good too)

    2 - 6 oz cans of Salmon (no bones no skin)
    1 - small onion
    capers
    Lemon zest (add some juice if you want too)
    Mayo or Olive Oil

    Sometimes I do add 1-2 celery stalks

Tips

Sometimes I use less onion depends what type I use.
Celery is good for our body's and adds a low cal crunch and bulk to our serving.


Directions

Key to this is to mince or grade the juice out of the onion
it takes very little to make a huge difference.
Fresh zest lemon is the best of all choices.

Add it all to a bowl and mix...chill for 1 hour to really marry the flavors but not a must :)
