Number of Servings: 4


    Carrots, raw, 4 medium
    Onions, raw, .25 small
    Garlic, 4 cloves
    *Canola Oil, 1 tbsp
    Salt, .5 tsp
    *Pepper, white, .25 tsp
    Ginger Root, 3 tsp
    Mori-Nu, Tofu, silken, soft, 70 grams
    Vegetable Broth, 2 cup


I use a vitamix machine to chop the carrots, etc but a food processor may work. Soup can be cooked on stove if not using vitamix.


Place carrots, onion and garlic in Vitamix and blend on high for 10 seconds..

heat oil in pan and saute chopped ingredients until soft. Add some broth if needed.

Place remaining ingredients in blender and add sauteed ingredients and secure lid. Blend on High for 4 minutes until heavy steam escapes from vented lid.

Serving Size: makes 4 servings about 1 1/4 cup each
