4, 6oz tilapia filets
jamaican jerk seasoning
salt
pepper
unsweetened coconut milk
jasmine or white rice
olive oil
canned or thawed frozen peas
pineapple, cut into rings
Directions
boil rice, butter/smart balance, coconut milk in sauce pan. then lower to a simmer and leave undisturbed 15 mins.
meanwhile, heat a griddler over medium-high heat with the olive oil. season tilapia with salt and jerk seasoning. lightly salt the pineapple rings. place fish and pineapple onto the griddler, and cook until the filets are golden-brown, about 3 minutes each side.
Take 2-3 pineapple rings and chop them up. Put them together with the peas and mix both into the cooked rice.
Serve immediately, garnish fish with pineapple and lime.
