Introduction

Number of Servings: 4

Ingredients

    1 lb. of lean ground turkey
    1 can of crushed tomatoes
    1/2 cup of chopped green bell peppers
    1/2 cup of chopped onions
    2/3 cup of frozen corn
    1 cup of dark red kidney beans
    1 cup of pinto beans
    2 cloves of finely chopped garlic
    2 tablespoons of cilantro (dried)
    1/2 tsp. salt
    3 tbsp. of chili powder
    1-2 Bay leaves
    Couple of twists of ground black pepper



Directions

In a medium sauce pot, sautee peppers, onions, and garlic in olive oil until tender and slightly browned. Remove from pot and put aside.

Brown turkey until cooked through, and drain. Add cooked vegetables to meat and mix/brown for another minute or so.

Add crushed tomatoes to meat mixture, along with corn, beans, and spices. Simmer for 30 minutes on low-medium heat, stirring occasionally.

Serve over brown rice with shredded low-fat cheddar cheese if you so desire.

Serves 4-6 people.
