Ingredients

Ricotta Cheese, part skim milk, 15 oz
Nutmeg, ground, 0.25 tsp
Olive Oil, 1 1tsp
Lemon Juice, 1 wedge yields
Parsley, 0.50 cup
Shallots, 3 tbsp chopped
Spinach, frozen, 1 package (10 oz) yields
President Fat Free Crumbled Feta, 4 oz
All White 100% Liquid Egg Whites, 1 cup
Red Onions, raw, 0.25 cup, chopped
Baby Bella Mushrooms, fresh, 1 cup, pieces or slices
Tips
FANTASTIC COLD, great along side a nice salad with a light vinaigrette. Leftovers make great breakfast grab-n-go. If you want, you can divide and bake in muffin tins for individual servings. Adjust cooking times.
Directions
Preheat oven to 350.
thaw, drain and thoroughly squeeze spinach until dry.
sautee shallots in olive oil until tender and slightly caramelized.
In mixing bowl, combine ricotta, egg whites, feta, spinach, chopped parsley, fresh grated nutmeg, a squeeze of lemon, salt and pepper to taste. Mix well, but don't over beat. Stir in shallots. Spray a round baking dish liberally with PAM (about 1qt size, more for a thinner quiche, less for a deep dish style).
Pour mixture into dish and bake in the center of the oven for 50-60 minutes.
Center should be set, with a slight jiggle to it. Remove from the oven, allow to sit at least 10 minutes before serving.
Serving Size: makes 4 generous servings as a dinner, 6-8 servings as a side dish
