Introduction

This salad is healthy, good and filling with generous 1 cup servings. You could easily add less oil and not sacrifice taste or add extra veggies. This salad is healthy, good and filling with generous 1 cup servings. You could easily add less oil and not sacrifice taste or add extra veggies.

Ingredients

    2 & 1/3 cups cooked sprouted bean trio
    1 & 3/4 cup cook quinoa
    1/4 cup chopped red peppers
    1/3 cup chopped celery
    1/4 cup olive oil
    6 TBLS white wine vinegar
    1 tsp dijon or spicy brown mustard
    salt and pepper to taste

Directions

Cook sprouted beans and quinoa according to packaged directions. I use Tru-Root from Costco. You can save any extra for other recipes. Chop vegetables while cooking and add to measuredsprouted beans and quinoa. Mix dressing and pour over salad. Mix and chill.
