Ingredients

1/4 cup Ideal sweetener for baking
1 tbsp + 2 tsp sweetener
2 tbsp cocoa powder
2 tbsp unsweetened almond milk
1 1/2 tsp wheat flour
1 large egg, separated
1/8 tsp vanilla extract
1/8 tsp cream of tartar
Tips
Quadruple the recipe and turn it into a mousse cake (as pictured)! Lower heat to 275 and bake for 40-45 minutes.
Directions
Preheat oven to 350º.
Coat two ramekins with baking spray, sprinkle with 2 tsp sweetener.
Mix 1/2 cup water with 1/4 cup sweetener, the cocoa, almond milk, flour and egg yolk in a metal bowl.
Lower bowl into larger pan of boiling water and simmer for 10 minutes, stirring constantly.
Remove from heat, add vanilla.
Beat egg white and cream of tartar until stiff peaks form.
Gradually beat in 1 tbsp sweetener.
When chocolate mix is completely cool, carefully fold in egg white mixture. Don't overmix as this will destroy the bubbles so crucial to the souffle.
Pour mix into prepared ramekins and bake for 20 minutes.
Dig in!
