Ingredients

Gluten Free pastry for a 9-inch single crust pie (store bought or basic pie crust)
1 cup organic sugar
1/2 cup agave
1 cup butter, room temperature
8 egg yolks
3/4 cup strong brewed Ear Grey or Lady Jane Grey tea, room temperature
1 tbsp. lemon juice
1 teaspoon lemon zest
2 tbsp. all-purpose flour
1.5 teaspoons cornmeal
1/2 packet unflavored gelatin
1/2 tsp. salt
Tips
This is best MADE AHEAD and refrigerated overnight.
Directions
Preheat the oven to 350 degrees.
1. In a large bowl, beat sugar and butter with mixer until fluffy
2. Add egg yolks to the butter/sugar mixture, one at a time, beating well after adding each yolk.
3. Add tea, lemon juice, and lemon zest to the batter.
4. Add flour, cornmeal, and salt to the batter and stir in with a whisk until incorporated.
5. Pour batter into the pie crust.
6. Bake for 45 mins. on the middle rack--place a cookie sheet on the bottom rack to catch any spills-- or until the edges are puffy and the center is firm.
7. Cool pie completely before slicing & serving--is best if made ahead, refrigerated, and served cold the day after.
