Ingredients

1.5 cups long-grain white rice
1 lb chorizo
1/2 onion, diced
1 stalk celery, sliced
1 can stewed tomatoes
4 eggs
Salt, Pepper, Garlic powder, red pepper flakes to taste
Tips
I didn't have cilantro on hand, but I bet it would have really been tasty with this.
Directions
Steam white rice or use rice cooker
While rice is cooking, brown chorizo about half way.
Add diced onion and sliced celery. Cook until onion is translucent.
Add can of stewed tomatoes. Cook until most of moisture is gone.
Remove from pan.
Scramble eggs until dry and flaky.
Mix with meat mixture.
Mix with cooked rice.
Add salt, pepper, garlic powder, and red pepper flakes to taste.
