Introduction

A friend from Mexico taught me how to make this. She didn't give me a recipe, but she had me watch her make it. The cinnamon adds a nice twist to the sauce. Ingredients

    5 Roma tomatoes
    1 jalapeno
    1 small onion
    2 cloves garlic
    1 TBS cinnamon
    5 cups of water
    1 packet of truvia

Tips

This was served over chicken tacos. I saved the leftover sauce and used it later in the week. It was just as good on beef as it was on chicken. You can use it hot or cold.


Directions

Wash the tomatoes and jalapeno. Take the skins off the garlic cloves and the onion. Place the vegetables (whole) in the 5 cups of water, stir in the 3 TBS cinnamon, and bring to a boil. Lower the heat and simmer until the vegetables are soft. Add the packet of truvia. Dump the whole thing--vegetables and liquid--into a blender and blend well. Serve warm.

Serving Size: Makes 8 half-cup servings.
