Directions

Chop onion and pepper, sauté in pot on med heat (1tsp olive oil optional) for 3-4 min or until softened. Add tomatoes, chopped carrot, and spices. (Chili powder, cumin, oregano). Stir, add water and let simmer for 35 min. Add beans and cook for 25-35 min or until liquid is reduced. If too watery, add can of tomato paste (optional). Serve.

Serving Size: Approx 6 1-cup servings
