Ingredients

    1 tbs butter
    2 large eggs
    1/2 cup 1% milk
    1 tsp vanilla extract
    1/2 tsp cinnamon
    1/4 tsp allspice
    1/4 tsp ground cloves
    1/4 tsp ground nutmeg
    1 pinch salt
    1/2 cup flour
    2 tbs powdered sugar (optional)

Directions

1. Put butter in a 9-inch cast iron skillet. Put skillet into the oven and preheat to 425 degrees.
2. Mix eggs and milk, add vanilla, spices and salt until smooth. Add flour and continue mixing until smooth again.
3. When pan is up to full heat, quickly remove, pour in batter, and return skillet to oven for 17 to 18 minutes (do not open oven or pancake will fall).
4. Remove skillet promptly, cut pancake into 2 pieces and plate.
5. Dust pancake with 2 tbs.powdered sugar if desired and eat immediately.
