Ingredients

    24 oz chicken breast
    1/4 c Jalapeno peppers (canned,sliced, juice not used)
    1 c Salsa of choice
    1 med onion
    1 med green pepper

    pepper, various other spices to taste
    (i used pepper, 1/4 tsp cumin, 1/4 tsp chili powder.)



    This recipe does not include any cheese, sour cream, tortillas, or ANY other add ins than the ones stated above.

Tips

I use this chicken for several meals throughout the week. Enchaladas, salad toppings, tacos, even Nachos (my husband's favorite!)


Directions

Chop green peppers and onions and place them at the bottom of your crockpot. Place chicken on top of the peppers and onions (I have used frozen chicken breasts for this and it has turned out just fine). Top chicken with Salsa and spices and let that crockpot work it's magic for about 5-6 hours. Shred the chicken with two forks, let sit in sauce for 20 additional minutes. ENJOY!
