Ingredients

    2 cups chickpeas, rinse and drain
    1 Tbsp Balsamic Vinegar
    2.5 tsp soy sauce
    1/2 tsp dried rosemary (may use oregano)
    1 tsp maple syrup

Tips

These chickpeas are a great topping for salads, but can be used for a snack. High in fiber and good source of protein.


Directions

Preheat oven to 400 degrees. Line a baking sheet with parchment paper. On the baking sheet, add all ingredients and toss to combine. Bake for 20 to 25 minutes. Toss chickpeas once or twice during baking, until the liquid is almost absorbed. Don’t let dry out, remove from the oven when still a little moist. They're meant to still be tender, not crispy.
