Ingredients

    1 Onion, diced
    2 or 3 cloves of garlic, minced
    1 head of Cauliflower grated (it's the rice)
    12 oz. precooked shrimp
    3 eggs
    ginger
    1/4 c. soy sauce (or to taste)
    Smart Balance Buttery Light Spread
    Pure Almond Milk Unsweetened
    1/4 C, shredded carrots

Directions

Saute diced onions in smart balance until soft. Add carrots and sautee a minute or two longer. Add grated cauliflower and shrimp. Sautee until cauliflower is soft and shrimp is hot. Add ginger and soy sauce.
In the meantime, scramble 3 eggs with 3 tbsp of skim milk or Silk Almond Milk. Add to saute mixture. Faux Shrimp Fried Rice. Delicious and healthy!!!!
