Introduction

Ingredients

    1 slice dark rye bread (I used Oroweat)
    1 slice Lightlife veggie "turkey"
    1 slice fat-free swiss cheese, like the kind by Kroger***
    1/2 tbsp sauerkraut (find it in the deli section)

    **note: if you want to double the sandwich size without necessarily doubling the calories, you can use a Laughing Cow light swiss cheese wedge.

Directions

Cut slice of bread in half.
Place swiss cheese slice on one half of bread; top with sliced "turkey" and spread sauerkraut on top of that. Top with other bread slice.
Spray with no-cal butter spray 5 times on top bread slice and place buttered side down on a medium-heated, nonstick skillet. Spray upward-facing side with another 5 sprays. After about 1 1/2 minutes, flip with spatula; continue to cook until bread is crispy and cheese is melty.
Enjoy!
