Introduction

Ingredients

    1.5 lbs lean beef stew meat or beef tips
    2 Tablespoons cooking oil
    5 medium mushrooms - quartered
    1/2 medium onion - minced
    1 large clove garlic - minced
    4 cups water
    1 Tablespoon Better Than Beef (dairy free boullion)
    1/4 teaspoon black pepper
    3 Tablespoons corn starch + 1/4 cup water


    3 Cups peeled potatoes - diced
    Water to cover and cook potatoes
    2 Tablespoons dairy free margarine (Earth Balance)
    2 Tablespoons dairy free sour cream (or cream cheese - Tofutti)
    1/4 - 1/2 cup soy milk (West Soy does not taste vanilla)
    1/2 teaspoon garlic powder
    1/2 teaspoon salt
    pinch of black pepper
    1 Tablespoon chives, green onions or parsley

Directions

Heat oil over medium high heat in medium skillet. Add beef, mushroom, oinion and garlic. Brown all turning only once or twice to get nice caramelization.

Add water and Better Than Beef. Bring to boil, reduce to simmer, cover and simmer 30 minutes.

While beef is simmering, peel and cut potatoes. Put in medium saucepan, ad salt and cover with water. Bring to boil, reduce to simmer and cook uncovered for 10-15 minutes or until fork tender.

Drain water from potatoes. Add dairy free margarine and sour cream, soy milk, garlic powder and black pepper. Mash or whip. Add chives, green onion or parsley at end and mix in.

In a small dish, mix corn starch with 1/4 cup water for gravy slurry.

Add corn starch slurry to beef mixture - 1/4 at a time stirring constantly to avoid lumps. (You may not need all of slurry - depends on how much liquid evaporates during simmer.) Cook 1 minute longer after each addition - or until cloudiness disappears. If you over-thicken, just add a bit of water until desired gravy thickness is achieved.

Serve beef over mashed. Enjoy!
