Number of Servings: 48

Ingredients

    1.5 Cups Whole Wheat Flour
    1.5 Cups Almond Meal (Ground Almonds)
    2 Cups Splenda (NOT sugar blend)
    2 Tbsp Baking Powder
    1 Tspn Baking Soda
    1/2 Tspn Salt
    2/3 Cup Canola Oil
    3/4 Cup Unsweetened Soy Milk
    2 Tspns Vanilla Extract
    1 Cup mashed Bananas (2 small to medium bananas)
    **Optional 1 Cup Chopped


Tips

Store in air tight container or plastic bag to avoid drying out. Enjoy!!


Directions

Preheat the oven to 350 degrees F.
In a large bowl, combine Flour, Sugar, Baking Powder, Baking Soda, and Salt. In another medium bowl combine Oil, Milk, Vanilla, and Bananas. Add Wet ingredients to Dry ingredients and mix until combined.
*Fold in walnuts if desired.
Using teaspoon or small cookie scoop fill each mini muffin tray.
Bake 10-15 minutes rotating trays half way through. Or until tops are golden brown.
