Basic flax muffins can be dressed up with fruit and/or nuts, plus a selection of spices. Basic flax muffins can be dressed up with fruit and/or nuts, plus a selection of spices.
Number of Servings: 24


    1/2 tsp baking powder
    1/2 tsp baking soda
    2 tsp ground cinnamon
    1 tsp ground nutmeg
    1 cup ground flax seed (meal)
    1/4 - 1/2 cup low-fat soy flour
    1/2 cup sugar substitute (like Splenda)

    100 g container 0% plain (vanilla) yogurt (or whatever kind you choose, if you prefer flavoured or higher fat)
    1 (33 g) egg white
    1 tsp vanilla extract
    50 ml unsweetened almond milk

    1 small (138 g) apple, chopped (don't have to peel)
    1 cup (145 g) raisins

    Can alter seasonings, types of fruit, nuts, yogurt flavour, to make recipe your own variety.


Can be frozen.


Combine dry ingredients

Combine wet ingredients

Mix two together, just until combined.
Place in lined (I use silicone liners or a silicone pan) muffin pan and bake until toothpick inserted in centre comes out clean - approx 15 - 20 minutes (longer for full-sized muffins)

Serving Size: Makes 24 minis or 12 regular sized muffins
